Lentil Vegetable Soup

Ingredients
- 1 cup dry lentils, rinsed
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups spinach
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 6 cups vegetable broth
- Herbs to taste
Instructions
- 1Sauté carrots, celery, and garlic in olive oil.
- 2Add lentils and broth; simmer 25–30 minutes.
- 3Stir in spinach and herbs at the end until wilted.
