- 1 can chickpeas, rinsed
- 1 cucumber, diced
- 1 tomato, diced
- 2 tbsp chopped parsley
- 2 tbsp olive oil
- Juice of 1/2 lemon
- Black pepper to taste
Instructions
- 1Combine chickpeas, cucumber, tomato, and parsley.
- 2Dress with olive oil, lemon, and pepper.
