Salmon with Morita Chile Glaze

Salmon contributes the omega-3 fats central to the MIND diet's fish recommendation, while morita chiles and olive oil add smoky depth without relying on excess salt or sugar.
Ingredients
- 2 salmon fillets
- 2 dried morita chiles (or 1 tbsp morita/chipotle powder)
- 1 tbsp honey or agave
- 1 tbsp orange juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- Lime wedges, for serving
Instructions
- 1If using whole morita chiles, soak in hot water 10 minutes, then blend with the honey, orange juice, olive oil, and garlic into a glaze.
- 2Brush the glaze over the salmon fillets.
- 3Bake at 400°F (200°C) for 12–15 minutes, brushing once more halfway through.
- 4Finish with a squeeze of lime before serving.
