Ingredients

  • 2 eggs
  • 1 cup fresh spinach
  • 1/4 avocado, sliced
  • 1 whole-grain tortilla
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1Warm olive oil in a pan and wilt the spinach.
  2. 2Add beaten eggs and scramble until set.
